Focaccia is one of the easiest bread to make. You can top it with a variety of ingredients, similar to a pizza. I've made focaccia with just garlic and rosemary and served it with a marinara dipping sauce.

The key to making a good Caprese is good quality ingredients. Fresh sweet tomatoes, fresh basil, a soft fresh mozzarella, good olive oil, and Maldon salt.
Roasting vegetables is something we do a lot around here. Lately, I've been dabbling in roasted chickpeas, which make a killer addition to Caesar salad, pasta, or for snacking. I love the idea of warm roasted vegetables piled high on top of pasta, drizzled with olive oil, and topped with seasonal herbs.
