The crust was thin, flaky and buttery. The mouse was light and airy, a bit silky, with the taste of dark chocolate and coffee. The meringue topping was like a billowy cloud perched on top, light and airy, and the crispy toasty bit's gave it a resemblance to S'mores. It was incredible.

A light moist cake, with a tender crumb. The hazelnuts are ground down with the flour, creating more of a fine hazelnut crumb rather than pieces of hazelnuts dispersed throughout. The addition of orange zest is what really through it over the top for me. I am pretty content eating this cake on it's own for breakfast, or classing it up with chocolate pudding and whipped cream for dessert.
I spent the better part of yesterday looking for a pudding recipe. I was in the mood for something chocolate, with a hint of orange. A time when waking up at 5:00 am to whack a chocolate orange on the table to loosen its wedges, seemed completely appropriate.
