Peanut Butter Chocolate Chip Cookies

I've been working on this cookie recipe for a few weeks. I think by now everyone around me is sick of peanut butter cookies, so is it acceptable to give them away tonight to trick-or-treaters? or is that just weird? To be fair, Sebastian is not sick of these cookies and would probably eat them for every meal, but what kind of parent would I be if I let him do that? You're probably thinking, why don't you freeze them? But our freezer is already full to the brim with Trader Joe's cauliflower pizza crusts and peanut butter cookies. So what I am really saying is, does anyone want to come over and eat cookies?

Pumpkin Spice Cake with Cream Cheese Frosting

We've been busy around here, fully embracing Autumn. We had a week long-rainy patch, which to be honest, I thought was going to be the norm right up until next Spring. But the rain has stopped, and it has been nothing but sunshine since. Perfect fall days, sunny, a little cool, leaves gently falling from the trees, and for my neighbors, tree branches falling from the trees right onto their roof. I live in an old neighborhood, surrounded by 50 - 100 ft trees. During the months of October and November, the wind picks up, and we usually have a few trees that lose large branches, and some trees that come right up out of the ground. Unfortunately for my neighbors, who just moved in 3 months ago, a giant branch fell and landed right on their roof. The branch must have been 20 feet tall and the size of a small tree. Luckily, no one was hurt, except for maybe some feelings. Since the incident, we've hired someone to trim up all of our large trees, because the last thing I need is a tree falling on our house. I have enough to deal with trying to potty train a toddler.

Whole Wheat Buttermilk Pancakes with Caramelized Apples and Whipped Cream


I've been waiting a few weeks to share this recipe with you guys!  I pulled it together one morning, which started with me quietly slipping downstairs, while Brent and Sebastian were still sleeping. I turned on the kettle and made myself a cup of tea. I started with a pancake recipe that I use often, but this time, I subbed half the all-purpose flour for whole wheat and added buttermilk instead of 2%. I didn't really have any expectations, I just thought, maybe this could be good.

Brown Butter Mac and Cheese with Tomatoes

I've recently discovered the secrets to a really good mac and cheese, and I can't believe it's taken me this long in life. These simple steps will take your mac and cheese game to at least a 10. Over the years, I've tried to figure out what I like and don't like about mac and cheese. I am firmly in the no breadcrumbs category. I prefer a very cheesy almost soupy consistency to my sauce. The noodles need to be firm and not mushy. And I need a bit of a bite to the cheese sauce.
