My cooking style can eloquently be summed up as: cheese before chocolate, put it in a sandwich and I'll eat it, and avocados and tomatoes are virtually inseparable. I believe that the pairing ability of avocados and tomatoes can be placed in the same category as apples and cheese, beer and pretzels, and pizza and wine. Delicious on their own, but even better paired. Did you know that avocados, or better known to the Aztecs as "butter of the forest", contain up to 30% healthy fats. I've been on a total avocado kick for the last 6 months, and my hair has been feeling extremely shiny. It could also be the new shampoo I bought. I don't know.
Avocados are quite often sold in the grocery store under-ripe, therefore you should allow 2 -3 days to ripen, although this process can be accelerated by storing near some bananas or wrapping in news paper. An avocado has fully ripened when it feels soft, but not squishy. Your finger shouldn't leave an indent in the skin when pressed. Over ripe avocados start to turn brown and loose their flavor. They pretty much taste like nothing. Fortunate for me, Fred Meyers sells their avocados just ripe, so when I had a craving for avocado pasta sauce using ripe avocados, I was able to make it immediately. When I was growing up, we never had avocados in the house. To be honest, I'm not sure why. Were they common 20 years ago? I'm not even sure I remember the first avocado I ate, or when. It must have been in guacamole form, possibly in Mexico, or maybe a Mexican-themed party. Although, I can remember the first tequila I drank. Definitely at a Mexican-themed party.
I now eat 1/2 avocado a day at breakfast. I sprinkle with a little kosher salt, and scoop it out with a spoon. People sometimes look at me and think this is weird. That's ok, because I know in my heart that it is awesome. I had never thought of making a sauce with avocado, until a friend of mine raved about it. I am so pleased with how it turned out, I just had to share. It's wonderful how the creamy consistency of the avocado replaces the creaminess from a more traditional Alfredo sauce. I love how the avocado gives the pasta a gorgeous green hue. The pine seeds add a bit of crunch and earthiness. The roasted tomatoes add a sweet and tart zing to break up the creaminess from the sauce. Top it off with some salty sharp Parmesan cheese, and you've got a perfect light summer pasta.
makes 4 servings

INGREDIENTS
10 - 12 small Campari tomatoes, quartered
3 - 4 tbsp olive oil
4 servings of fettuccine noodles
2 ripe avocados, seed and skin removed
2 garlic cloves, peeled
1/2 tsp salt
2 tbsp lemon juice
1/4 cup pine nuts
grated fresh Parmesan cheese
notes: add some grilled prawns or chicken for protein.

INGREDIENTS

Preheat oven to 300 ºF.
Wash and quarter the tomatoes. Place on a baking sheet lined with parchment paper. Drizzle with 1 - 2 tbsp olive oil, just enough to make the tomatoes glisten. Bake for 1 hour in the oven.
Ten minutes before tomatoes are finished, fill a large pot with water and a sprinkle of salt. Bring to a rapid boil. Add the dry fettuccine to the water and cook until al dente.
While the pasta is boiling, add 2 tbsp olive oil, avocado, garlic, salt and lemon juice to a food processor. Pulse until the ingredients are smooth and creamy.
Strain the pasta, and combine with the sauce in a large bowl, until all the pasta has been covered.
Add the roasted tomatoes, sprinkle with Parmesan cheese and pine nuts. Add some salt and black pepper to taste.

Do you ever eat your morning avocado on toast with the same sprinkling of salt? Sometimes that's how I like it.

ReplyDeleteThanks. You could probably eat it within a couple of hours from making. The only issue is that the avocado turns brown quickly. The lemon juice somewhat helps though. You could always make the avocado sauce ahead of time, put it in the fridge, and then heat up some noodles later in the evening.

ReplyDeleteHoly cannoli - made this tonight and it was SO yummy. My fiancee loved it and he is not into health food at all. I didn't have the time to wait for the tomatoes to cook, so I used grape tomatoes cut in half and sauteed them for a minuted or two with a bit of olive oil and garlic and then tossed them with the pasta.

ReplyDeleteI have an avocado tree. For the last 12 years that I have lived in my house, it mhad 3 total avocados. Someone told me it must be a female and you have to live near a male tree to pollinate it, and I just assumed there was not a male nearby.

My husband read online how to properly prune an avocado tree. We now have 100 avocados and many that I can't reach!! So I am seeking out avocado recipes, like the vegan chocolate pudding I made last week and the avocado margaritas EPCOT makes. I'll have to add this to my list. ReplyDeleteYes you can definitely mix the avocado by hand. Just make sure your avocado is ripe and soft. Try using a wooden spoon.

I don't think the cream cheese is necessary, but you could give it a go and let me know what you think. It would definitely add some extra creaminess and may alter the flavor, but that might not be a bad thing. Lemon and salt, and scoring and seeping. This all sounds so good.

I am making this fantastic recipe tonight for dinner for the second time. This use of avocados is truly inspired. Just some advice for those who have not tried it yet. Follow the recipe the way the recipe reads the first time you try it. Especially roasting the tomatoes. The flavor of the roasted tomatoes is unbeatable. Don't worry about warming up the sauce as you will pour this over very hot pasta and it will warm up just fine. The first time I served it with a panko crusted chicken and foccia bread. Tonight I will service with sausage. Enjoy!!

I don't have a food processor, but I have a Magic Bullet. it worked great, but next time when I make it (tomorrow) i need to let the avocado's sit out for about an hour. being cold, they didnt mush up to well in the bullet. I had to take it off, spoon it a lot push it back down and then it did okay. Little manual labor, but TOTALLY worth it. We are having guests so I am going to try add chicken with it. ReplyDeleteI made this last night for my future mother and brother-in-law and it was an absolute hit! Brother-in-law is a chef to, so that made me feel extra special :) I almost left out the pine nuts because they were so expensive but they really made the dish! I thought I had fetuccine on hand but I didn't so I used farfalle bowties instead and it still worked great. Also, didn't have enough time to roast my own tomatoes so I just bought canned fire-roasted tomatoes- they didn't know the differece :) Next time I'll add a protein...thanks for the great recipe!!

Before having them, I didn't like garlic, onion, mushrooms (they do need to be nice shrooms still) or avocados. Can you believe that? How did I live? Rediculously good! And that is coming from an Italian American! I added a tablespoon of greek yogurt (seems to keep the avocado from turning brown). Topped it with fresh chopped basil, toasted pine nuts, and romamo. Perfection!

I just wish I lived in a climate where I could grow my own. I think the tomatoes will get roasted in an old, well seasoned iron skillet. It's been my go to pan for roasting vegetables. To prevent browning, a dash of lemon pepper, which contains citric acid will help.
ReplyDeleteThis was so fabulous! Raw garlic gives me wicked heartburn, so I roasted a clove along with the tomatoes and used that when I blended the cream sauce. It was VERY thick so I needed to use coconut milk to thin it - maybe my avocados were big? I don't eat dairy so I added nutritional yeast to my bowl instead, everyone else had parmesan. This was so quick, easy, and tasty. It's definitely going into my weekly rotation!

ReplyDeleteI would say that it is more of a warm dish. The avocado is at room temperature, but the noodles are hot. You can eat it cold if you prefer though.

My daughter and I both tried this recipe. She made with goat cheese instead of parmesan and loved it. My husband and I loved the flavor of the roasted tomatoes and olive oil. We used Madison, Maine's Backyard Farms cocktail tomatoes. They made the dish. Thank you for sharing.
