Cajun Fried Potato Cakes





















Ingredients (serves 4)
4 small potatoes, shredded
2 tbsp butter
1 tsp salt
1 tsp pepper
1/2 tsp Cajun spice

1. In a food processor, grate the potatoes. Mix in salt, pepper, and Cajun. Press the potatoes into flat pancakes and fry in butter over medium heat for 10 minutes on each side, or until crispy.
