Bok Choy Stir Fry with Peanuts

Bok Choy Stir Fry with Peanuts (serves 2)

1 cup dry jasmine rice
1 tbsp canola oil
1 1/2 cup veggie chicken
1 bok choy chopped
1 green pepper
2 cups oyster mushrooms
1 tbsp mushrooms sauce
1 tbsp soy sauce
1 tbsp sugar
1/2 cup veggie broth
1/4 cup peanuts

1. Place rinsed rice and 1 cup of water in a rice cooker. Cook until done.
[I rinse my rice about 4 or 5 times to ensure that all of the excess starch is washed off. This makes the rice less sticky.]

2. While the rice is cooking, fry the veggie chicken (medium heat) in oil for 10 minutes. Then add the veggies. Sautee for 5 minutes. Next, add the mushroom sauce, soy sauce, sugar, and veggie broth, and simmer for 5 minutes.

3. Serve on rice and top with peanuts.
