Apple, Carrot, Bran Muffins

yields 16 muffins
Recipe adapted from Bob Red Mills Bran Flax Muffins

2 1/4 cups whole wheat cake flour
3/4 cup flaxseed meal
1 cup brown sugar
2 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1 1/2 cups shredded carrots
2 apples, peeled and shredded
1/2 cup raisins
1/2 cups walnuts
3/4 cup milk
2 eggs, beaten
1 tsp vanilla

1. Preheat oven to 350 F.

2. In a large bowl, mix together flour, flaxseed meal, brown sugar, baking soda, baking powder, and cinnamon. Next, stir in carrots, apples, raisins, and walnuts.

3. Comine milk, beaten egg, and vanilla. Pour the liquid ingredients into the dry making sure not to overmix.

4. Fill muffin cups 3/4 full and bake for 15 - 20 minutes.
