Tiny Whole Wheat Blueberry Muffins

I have just finished packing my gear and am now taking the road trip/snowboarding snack (blueberry muffins), out of the oven. I have a condo booked (with a hot tub) in Glacier, which is only 17 miles from Baker. We are leaving in a couple of hours and I am really excited. It's been snowing at Baker all week, so you know what that means - pow pow. The weather forecast for this weekend calls for sunny skies. pow pow + sunny skies = perfection. Ody (my dog) is going to doggy daycare this weekend, and he seems pretty stoked as well. Life is pretty good!


1 3/4 cup whole wheat pastry flour
2 tsp baking powder
1/2 tsp salt1/2 tsp cinnamon
1 egg
3 tbsp melted butter
2 tbsp apple butter
1/2 cup milk
2 tbsp cream
1 tsp vanilla
2 cups blueberries

Preheat oven to 375 F.

Whisk the dry ingredients in a large bowl. In a separate bowl whisk the egg. Add the butter, apple butter, milk, cream and vanilla and whisk until combined.

Add the dry ingredients to the wet and mix until combined. Do not over mix. Fold in the blueberries. [The batter should be dense].

Scoop the batter into mini muffin cups. Bake for 25 minutes.
