Carrot Cake

I think most people would agree that baking is so fun. It's like magic. You mix a bunch of ingredients in a bowl, put it in the oven, and voila - you are a magician.


1 cup grape seed oil
1/2 cup buttermilk
1 1/4 cups white sugar
4 eggs
1 tsp vanilla
4 cups grated carrot
1/2 cup raisins
2 tsp baking soda
2 1/2 cups whole wheat cake flour
2 tsp cinnamon

2 - 8oz packages of cream cheese, room temperature
1/2 cup butter
1/3 cup icing sugar
1/3 cup white granulated sugar
1 tbsp vanilla

Preheat oven to 350 ºF.

In a bowl, beat the oil, buttermilk and sugar until combined. Add the eggs and mix well. Next, add the vanilla, grated carrots, raisins, and baking soda. Continue to mix until combined.

Finally, add the flour and cinnamon to the carrot mixture and mix well. Pour the batter into two well greased 9" round cake pans and bake for 40 minutes.

Let cake cool for 10 minutes then remove from pan and let cool on a rack for 30 min - 1 hour.

While the cake is cooling, place the cream cheese, butter, icing sugar, white sugar, and vanilla into the bowl of a stand mixer. With the paddle attachment, beat the ingredients on low speed until combined. 

When the cake is cool enough, ice and add walnuts for decoration.
